Crepes (French)
Crepes are very thin pancakes that can serve as a foundation for many different fillings and toppings. For delicious desserts, try them with sweet fillings such as whipped cream, ice cream, jam or fresh berries.
1 1/2 cups all-purpose flour
2 teaspoons sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups milk
2 tablespoons butter, melted
2 eggs
In a medium bowl, mix dry ingredients. Stir in remaining ingredients and beat until smooth. Heat a lightly oiled frying pan over medium heat until bubbly. To cook crepes, pour 1/4 cup batter into the bottom of the pan. Tip the pan so that batter spreads out very thinly. Fry lightly on both sides. Fill with desired filling. Makes 12 crepes.
Pancakes
Make pancake mix from package. Pour into a squeeze bottle. Let kids "design" their pancake by squeezing onto hot griddle. Turn pancake. Serve with jelly or syrup. We also like to put a cinnamon/sugar mixture on our pancakes.
Cinnamon Apple Pancakes
As a special treat, German children love to make these pancakes for supper. Instead of putting maple syrup on their pancakes, Germans prefer a topping of honey or whipped cream.
1 cup buttermilk baking mix, such as Bisquick
1/4 teaspoon ground cinnamon
1/2 cup milk
1 large egg
1 small apple, such as Golden Delicious, peeled, cored and finely chopped
1 tablespoon butter or margarine
In medium-size bowl, combine buttermilk baking mix and cinnamon; stir in milk, egg, and chopped apple just until mixed. In 12-inch nonstick skillet or griddle over medium heat, melt butter. Drop 2 tablespoonfuls batter onto skillet for each pancake. Repeat with remaining batter, making a few pancakes at a time. Cook pancakes until tops are bubbly and edges look dry. With wide spatula or pancake turner, turn pancakes; cook 2 minutes longer or until undersides are golden. Repeat until batter is used. You may have to add a little more butter to skillet as more pancakes are made.
Dutch Panacakes
1 Tbs. butter
2 eggs
1/2 C All-purpose flour
1/2 C Milk
1/2 C plain yogurt - (I actually prefer vanilla)
1 C mashed strawberries or raspberries
2 Tbs. unsweetened apple juice concentrate (optional)
Preheat oven to 425. Heat an empty 8 or 9 inch pie pan in the oven. Melt the butter in the bottom of the pie pan. Blend eggs, flour and milk together in a blender and pour into the pie pan. Bake for 25 minutes. Fill pancake with yogurt and top with mashed berries. Sweeten berries with apple juice concentrate , if desired. Cut into 6 wedges and serve. Makes 6 servings.
Cinderella Pumpkin Waffles
(From "Cooking with Mickey & Friends". Forgive the directions - they are written for older kids! LOL! This is a GREAT cookbook with lots of fun and healthy recipes if anyone is interested in a "Disney" theme)
Ingredients:
1 1/2 C all purpose flour
1/4 C packed dark brown sugar
2 tsp. baking powder
1 tsp. ground cinnamon
1 tsp. salt
1 egg
1 1/4 C low-fat milk
1/2 C canned pumpkin (not pumpkin pie mix)
2 Tbs. vegetable oil
Nonstick cooking spray
Preheat waffle maker.
Combine the flour, sugar, baking powder, cinnamon, and salt in a large bowl. Lightly whisk, or stir, to mix well. You may need to crumble any bits of brown sugar with your fingers to make sure there are no lumps. Then whisk it again.
Combine the egg, milk, pumpkin, and oil in a small bowl. Whisk or stir to mix them well.
Pour the egg mixture into the flour mixture. Stir it gently until it forms a smooth batter.
Spray both sides of the waffle maker lightly with nonstick cooking spray.
Use a 1/2 cup measuring cup to pour a heaping amount of the batter onto the grids. Scrape out the inside of the cup with a soup spoon (this is a fairly thick batter). Use the spoon to spread the batter to the edges of the grids. Close the top, and cook for about 4 minutes or until the waffle is set and the top opens easily. Use a fork to remove the waffle.
